Spicy Chicken Fajitas Recipe


You know those days when you’re not entirely sure what to make for dinner? You don’t have enough ingredients to make something extravagant, you’re a bit low on time maybe due to a busy job or taking care of your children, and above all you’re truly questioning what’s gonna hit the spot?

We’ve all been there. Then, you have to become a magician in the kitchen to make things work, which can definitely be a hassle when you’re low on time.

These delicious spicy chicken fajitas can be made very fast, and all in a single pan. They will be a dish the whole family loves. Before you know it, Fajita Fridays will become a new tradition in your home.

Total Time: ~26 minutes, 10 minutes for prep, 16 minutes to cook

What you’ll need to make this dish


3 boneless/skinless chicken breasts

3 bell peppers, sliced thinly

1 onion, sliced thinly

2 tablespoons of olive oil

Spicy fajita seasoning (making your own is recommended)

½ lime (optional)


What you need to make the fajita seasoning:


½ tablespoon of ground cumin

½ tablespoon of chili powder

½ tablespoon of cayenne pepper

1 teaspoon of garlic powder

½ teaspoon of paprika

½ teaspoon of salt

½ teaspoon of oregano

¼ teaspoon of pepper


What you need for serving:


Tortillas

Sour Cream 

Chipotle Sauce 

Cheese 

Salsa

Guacamole 


How to prepare


Step 1: If you’re making your own fajita seasoning (if not skip to Step 2) mix your fajita seasoning ingredients in a mixing bowl, and stir together.


Step 2: Sprinkle fajita seasoning on each side of the chicken. Use your fingers to press into the chicken.


Step 3: Heat olive oil over medium heat. Sear the chicken breasts on each side for approximately 8 minutes.


Step 4: Remove chicken from skillet and place on a plate. Let it rest for a couple minutes.


Step 5: While the chicken rests, add your sliced veggies to your skillet over medium heat, and saute for approximately 5 minutes while stirring frequently.


Step 6: Near completion of the veggies sauteing, start to slice chicken breasts into strips. 


Step 7: Add chicken back to the skillet and stir everything together, and if you so choose, add a squeeze of lime juice before stirring for an extra kick.


Step 8: Serve the dish immediately with tortillas and your choice of toppings.
