Potato Cake with Tart Apples & Jarlsberg

What you’ll need to make the Potato Cake with Tart Apples & Jarlsberg:
- 1/4 cup olive oil
- 8 medium potatoes, peeled and thinly sliced
- 2 medium Granny Smith apples, peeled, cored, quartered, and thinly sliced
- 1 medium shallot, thinly sliced
- 1/2 cup chopped fresh parsley, plus more for garnish
- 1 1/4 tsp. salt
- 1/2 tsp. freshly ground pepper
- 3/4 cup finely grated Jarlsberg cheese

Butter, for greasing foil
How to prepare the dish:

Preheat oven to 425°F. Coat inside of The Pan with olive oil; set aside.

In a large bowl, toss together potatoes, apples, onion, parsley, salt, and pepper. Spread half the potato mixture in The Pan, scatter with cheese, then top with the remaining potato mixture. Be sure to push the potatoes down tightly. Cover with a piece of lightly buttered foil and bake for 40 minutes.

Remove foil and continue to bake until potatoes are tender and the top is lightly browned about 20 more minutes. Increase oven to broil and cook until top begins too crisp about 2 minutes. Sprinkle with parsley. Cool slightly before serving
