Spicy Taco Rice Skillet
This Spicy Taco Rice Skillet is an easy-to-make dinner that serves the whole family and tastes amazing. You can make it as mild or as spicy as you want to and with very little preparation involved all you need to make this dish is The Pan and The Spoon to stir.

Total Time: 25 minutes, 5 minutes to prepare, 20 minutes to cook.
What you’ll need to make Spicy Taco Rice:
- 1lb ground beef
- 1 large onion, diced
- 2 bell peppers, diced
- 1 8oz can diced tomatoes with green chilis
- 1 cup salsa (optional)
- 1 cup long-grain white rice (NOT minute rice)
- 2 cups beef stock
- 2 tsp cumin
- ½ tsp cayenne pepper
- 1 tsp chilli powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 cup shredded cheddar or jack cheese
- green onions, cilantro, and olives, to garnish
How to prepare the dish:
- In a large pan, brown beef
- When beef is lightly browned, add diced onions and peppers.
- Cook until beef is fully cooked, and onions and peppers are soft.
- Add a can of tomatoes with green chilli- no need to drain.
- Add salsa, rice, water and stock.
- Stir well to combine.
- Add in spices and mix, cover.
- Let simmer on low until the rice is soft and the liquid has cooked off.
- Top with cheese, and stir in until it melts.
- Serve!
